You will find bell peppers and onions in many of my recipes. Tasty easy vegetables that can be used in many ways. There are also kilometers of greenhouses in the area where peppers are grown. Sometimes there is a small stall along the road with bags of fresh peppers. Then you can put two euros in a container and on your way with your fresh peppers. This time I had a real surplus in my fridge, hence these stuffed bell pepper rings. An easy way to get rid of it without wasting food! stuffed peppers with minced meat

-Take the peppers and cut off the top and a piece of the bottom. Set these aside. Remove the seeds and white edges from the pepper and cut into 3 rings.
- Grab a large bowl, then chop the onion, dice the remaining bell pepper tops and bottoms, and chop the garlic cloves. Put all this in the bowl and then add the minced meat, the egg, the breadcrumbs and the half bag of parmesan cheese. You knead this all together well.
-Now take your bell pepper rings and fill them with the minced meat mixture, press gently but firmly. (Put the rings on a baking paper on a cutting board then you can easily remove them again)

- Grab a frying pan and add some olive oil, fry the rings on both sides for about 2 minutes, then put the rings in a large oven dish. Scoop some diced tomatoes on each ring with a spoon and garnish with some parmesan cheese.
-Place in a preheated oven at 200 degrees. They should be in the oven for about 30 minutes until the top is nicely colored.
-And finally you take the dish out of the oven, take a spatula to place the rings on your plate, it may be that the ring is a bit loose around the minced meat.

And finally, when you have them on the plates, garnish the rings with some capers and a little grated cheese, serve with a nice red wine: delicious bites!
