The holidays are coming up again! Time for a nice roast and beautiful pieces of meat that you can serve at the table with the whole family. This piece of meat does need some attention, because we are going to tie it up ourselves. But once you have mastered that, you will succeed in no time! This recipe for stuffed beef roll with cranberry sauce will certainly not be out of place during your dinner, and while it bakes quietly in the oven, you have all the time to make the rest of your dishes. Get a nice piece of meat from your butcher and if necessary have him cut the meat in half for you. Then you have even less work to do and you only have to roll it up and tie it up.

I'm not going to put the cranberry sauce in the recipe card because I've already made a recipe for it before. You can find it here, for me a true classic that has been on the table for years, and Christmas is not complete without it. You can serve it separately, but I also spread a few spoonfuls of it on the meat that we then roll up. The oyster mushrooms and shallot are also optional or can be replaced by other ingredients. For example, if you go for an Italian-inspired Christmas, you can also spread it with pesto, for example.

Ingredients:
- 750 gram bavette - (cut in the middle but not all the way through)
- 75 gram oyster mushroom - chopped into pieces
- 1 shallot - XNUMX onion - shredded
- 1 el roulade spice mix
- 4 el Cranberrysauce
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 140 degrees. Make sure your meat is at room temperature!
- Chop and finely dice the shallot and fry briefly in the frying pan with some olive oil.
- Sprinkle the cut bavette with the herb mix (1/2 tablespoon) and spread the cranberry sauce (* see notes for recipe) on it. Scoop the shallot and oyster mushroom on top and then roll it up.
- Tie the roulade with 5 pieces of kitchen string. 4 or 5 across the width and 1 across the length.
- Fry the roulade in a frying pan with some olive oil and cooking fat until nicely brown all over and then place it in an oven dish.
- Place in the oven for 40 to 60 minutes, that depends a bit on your oven, it is done when it has a core temperature of 55 degrees. That can therefore differ per oven. Bake with a meat thermometer, or measure the temperature regularly.
- After baking, let it rest for 10 minutes before cutting.
