Wait a minute…Pizza! As tasty as it is, we can't call the pizza very healthy. Ordering one every now and then is a real guilty pleasure here at home. Still, there had to be a way to eat pizza and not feel guilty about it. This is where the eggplant comes in, because if you cut it into slices you can invest it nicely and the big advantage is that it doesn't have to be in the oven for very long. Because eggplant itself does not have a very pronounced taste, it quickly absorbs all the juices and flavors that you put on top.
