With baking I have found that the right and good material is half the battle. Friends of ours with French roots gave me a Madeleine baking tin. And it seems that your baking can hardly fail with this! I still haven't made the original sweet, sugary recipe and I will definitely do it again. But this time I did get started with these healthy Madeleines with pumpkin puree. Less sugar, also vegetables processed in it and still super tasty. It's possible! Now it would have been super cool for the photo if I had dipped them in chocolate or something. Or a thick layer of sugar, but that was not the intention of this Madeleine recipe. Healthy Madeleines with Pumpkin Puree
The original Madeleine recipe comes from Commercy located in the Lorraine department in France. Sounds pretty German, doesn't it? It therefore borders Luxembourg and Germany and a small point on the Belgian Ardennes. North-East France. And actually not that far from the Netherlands. We have been there ourselves during a holiday in Northern France.
Unfortunately, we see more and more abandoned areas. These healthy Madeleines, enriched with pumpkin puree, are a modern take on the traditional French pastry. Enjoyment in moderation is recommended, although you are almost irresistibly tempted to keep eating. However, in France, the country of origin, it is a true tradition to buy freshly made Madeleines at the local bakery. Its popularity is so great that in some places, such as Aix en Provence, you will find specialized Madeleine bakeries, which are completely dedicated to this delicate pastry.

- 120 gr spelled flour
- 85 gr flower
- 80 gr butter
- 125 ml maple syrup
- 225 gr pumpkin puree
- 2 eggs - (large eggs)
- 60 ml milk
From the pantry:
- ½ tl baking powder
- 1 tl baking soda
Herbs and spices
- 1 el cinnamon
- 1 el biscuit spices
- ½ tl salt
- 1 tl vanilla essence
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 170 degrees.
- Melt the butter in a bowl. (I always do that in the oven that is preheating, then take it out of the oven with oven gloves! )
- Using a whisk, whisk in the pumpkin puree, eggs, milk, maple syrup, and vanilla essence until smooth.
- Sprinkle the baking soda, baking powder, salt, cinnamon and biscuit spices on this, and stir well.
- Sift the two types of flour and flour through a sieve into the mix and carefully fold the whole with a spatula into a batter. Don't mix like crazy, just mix it in gently.
- Spray your Madeleine tin with some cooking spray (or grease with butter) and spoon 1 heaped tablespoon of batter into each compartment.
- Place the Madeleine tin in the oven and bake for about 15 minutes. (Be sure to do the skewer trick)
- Remove from the oven and let cool briefly, then you can easily pop them out and let them cool further on a rack, then bake the second half of the batter.
- You can decorate them with melted chocolate if you want, but they are delicious that way too. They keep for a few days in a Tupperware box.
