We have discovered that you can make very tasty new recipes with leftovers from other dishes. Throwing food away is such a waste! If you consider how much energy and effort goes into the production of your food. It starts, of course, with the seed that goes into the ground. All the next steps that follow until it is actually on the counter or in the fridge at your house are so many. And to think that sometimes we throw something in the container very carelessly. Delicious with raclette cheese on top and processed in it.

A lot is already being done to raise awareness and I see many other bloggers coming up with beautiful no-waste recipes. I made a number of well-filled sauerkraut casseroles with some Christmas leftovers. And I liked them so much that I've made them several times already. z

The dishes go into the oven and then enjoy.

Actually, you should dive into your freezer, take a critical look at your pantry and then make a weekly menu. Because how much meat do you have left in the freezer? How many packs of pasta or rice do you have in your cupboard? And which vegetable is there in your fridge that really needs to be used now….. Perhaps if you let your creativity go wild, you suddenly come up with a delicious new recipe.

The sour and the sweet in these casseroles go very well together.

A simple cheese sauce or red sauce is made in no time! For these well-filled sauerkraut casseroles I used leftover cranberry sauce, and the puree and cheese were also in the refrigerator waiting for me to reuse them. With very few resources you can have a nice new dish. This saves money and prevents food waste. Nothing has been thrown away, which is both sustainable and budget-friendly.

Here you will find the complete recipe with all the ingredients you need. I hope you have fun preparing the dish below.

  • 500 gram puree - (I used leftover parsnip/potato puree)
  • 4 el Cranberrysauce
  • 8 to stick bacon
  • 1 package sauerkraut
  • 8 to stick raclette cheese
  • Persillade (spice mix)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Fry the bacon slices in the frying pan and let them drain on a kitchen paper.
  • Cook the sauerkraut in a pan over low heat for 20 minutes.
  • Take your oven dishes and put a layer of puree in them first.
  • Then fill with a layer of sauerkraut, put a pack of bacon and a slice of raclette cheese on top. And then add a tablespoon of cranberry sauce.
  • Then fill with another layer of sauerkraut and a layer of puree, bacon and place a slice of cheese on the puree. Sprinkle some persillade on top and put in a preheated oven at 200 degrees.
  • Place in the oven for 25 minutes until the cheese has melted and serve.
  • Delicious bites!
On my website you can find the recipes for the puree, Cranberrysauce and with parsley
Don't have raclette cheese at home? No worries, you can actually use any cheese that melts nicely. Especially if you want to give it some extra spice, for example a gorgonzola or other French cheese.
