This sauce has a long history and is usually made with mayonnaise. But I personally find that too fatty and also has far too many calories. To give you an idea: one tablespoon of mayo (20 grams) is already 133 kcal. Cottage cheese per 20 grams has only 20 kcal, that's quite a difference. Especially with a dressing where you unknowingly consume a lot of extra kcal. Sauce often makes your dish, but is also often a source of unexpected kcal.

The salad itself has only four main ingredients. Making it is really super simple. You can cut the broccoli very finely and you don't necessarily have to cook it, but I don't think the taste is that great. That's why I recommend blanching the vegetable briefly in boiling water and then letting it drain well in a sieve or small colander. You can choose chicken fillet, but also chicken thighs. The latter are a bit fattier, but if you grill them, a lot of that fat will melt away on your grill.

- 300 gram chicken breast - in cubes
- 200 gram sweet potato - in cubes
- 350 gram broccoli - finely chopped
- 1 shallot - XNUMX onion - shredded
- 1 tl ras el hanout
- 1 tl berber spice mix
- 2 el olive oil
- sea salt
For the dressing:
- 100 gram of cottage cheese
- 4 el low-fat quark
- 50 ml water - (or something more)
- 2 twigs golden dragon
- 2 twigs dille
- 2 twigs Parsley
- ½ tl fresh pepper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the chicken into cubes and season with the berbere spice mix. (of course it can always be more than 1 tsp!)
- Peel the sweet potato, cut into cubes and place in a baking dish. Season with the ras el hanout. Drizzle with olive oil and place in the oven at 200 degrees for about 30 minutes until cooked.
- Strip all the leaves from the sprigs of fresh herbs (tarragon, dill and parsley). Place these together with cottage cheese, quark, water and fresh pepper in a food processor or blender. Blend until smooth, green dressing. Is the dressing too thick? Gradually add more water until desired consistency. Taste and season with extra pepper or a pinch of salt if necessary.
- Fry the chicken in some olive oil until done.
- Chop the broccoli finely and blanch briefly in boiling hot water and drain well. Chop the shallot.
- Mix everything in a large bowl with the dressing and then it's a delicious bite!
