Estimated reading time: 3 minutes

The Greek cuisine. Actually, I cook very little Greek. And there is not necessarily a reason for this, even though Greek cuisine is also Mediterranean. And it's close to my heart. During a conversation with another foodie Being of Greek descent, I thought it was time to start cooking from this kitchen. I still had a bag of cooked beetroot in the fridge and started looking for recipes with beetroot. Greece Greek beetroot salad

Soon the Greek pantzaria salad came up. Unfortunately, after a long search I was not able to find much background information about it. It is a salad that has been made for centuries and is eaten throughout Greece. And I have to say after tasting this salad my Greek taste buds have been shaken up and I will definitely be using it more often.

And this is how you make the Greek pantzaria salad:

-First take the garlic and chop it very finely, you can also grate it. So we use raw garlic, which is quite sharp but gives the dish a lot of flavor.

-Like I said I used pre-cooked beets, of course you can also make your own offering to cook. Cut these into wedges and put them in a nice bowl or large bowl.

- Finely chop the parsley and fresh mint and sprinkle with the garlic over the beets.

-The dressing is also not very complicated, just beat the olive oil and the red wine vinegar to a vinaigrette and season with salt and pepper and pour this over the beets. Mix it all carefully. Beets are quite fragile and you don't want to crush them completely.
