I make soups like this quite often, just using the leftover vegetables from the week before. In my Instagram stories I already showed that I cut off a piece of the zucchini because it had partly become mouldy. So it is not necessary at all to throw away the whole zucchini if a piece is no longer good. I was asked whether or not the entire zucchini was affected, you just have to see it as with an apple with a brown spot on it.
You cut this away and then you eat the rest of the apple too, right? And after we have cut the vegetables, we will also cook it of course! So no, just use it and just cut away the not so good pieces. You also save on your wallet….

Ingredients:
- 2 witte onions
- 1 stump broccoli
- 2 zucchini
- handful of fresh basil leaves
- 2 cubes chicken bouillon
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Chop and chop all vegetables coarsely, we will mix it completely smooth with the immersion blender.
- Put some olive oil in a pan and fry the white onion in it first. Then add the rest of the vegetables and stir fry for about 5 minutes.
- Crumble the stock tablets and add a liter of water. Bring to the boil and let it simmer for about 20 minutes until the vegetables are completely soft.
- Finally, toss in the basil leaves and place your immersion blender in the pan. Mix into a delicious soft soup.
