We are all in the mood for Halloween today. We made pumpkin lanterns this year and that has become the symbol of Halloween. Pumpkins are everywhere at the moment, but in this Halloween Jack O'lantern pie only the lid is in the shape of a pumpkin. Did you know that in the past the lantern was not carved from a pumpkin at all but from a turnip? The Irish who emigrated to America started carving pumpkins because that was much easier! Here's how to make the Halloween Jack O'lantern pie:
-Preheat your oven to 200 degrees.
-Take in the onion and garlic and chop finely. Remove the sauerkraut from the bag and put it in a colander. Drain well and squeeze out any remaining moisture.
-Take a frying pan and first crumble the minced meat in it, pour the excess fat from the pan otherwise it will become too fat. Then add the onion and garlic and season with pepper/salt and pumpkin spice herbs. If you don't have it or if you don't like it, add spices to your taste.
Cut the chestnut mushrooms into quarters and add them to the pan together with the sauerkraut. Let it all simmer for a while.
-Get small round oven dishes and grease them with some olive oil. Cut circles from the puff pastry that fit exactly on top of the tray. Use a sharp knife to make small faces in the puff pastry.
-Before you scoop the pie filling into the ramekins, add some cranberry sauce to the pan, this combination with the sauerkraut is really delicious!
- Finally, place the puff pastry Jack O'lantern faces on the trays and brush them with beaten egg. Then put them in the oven for 20/25 minutes until they are a nice golden brown.
