This is a surprising hamburger recipe or soup recipe! Because one doesn't have to exclude the other, right? Of course grilling a hamburger and serving it on a bun is always a good idea…. but the meat can also be used in other ways. I had a few burgers in my freezer that really needed to be used up. You probably know it, somewhere at the bottom of your drawer you suddenly find a few trays of meat that you bought because they were on sale. Then life goes on and they are forgotten. So you have another nice zero waste soup recipe! Once in a while I clean out my freezer and only cook with the products I find in it. You can usually keep your products in the freezer for quite a long time, but with meat such as in this hamburger recipe, I leave it in it for a maximum of 3 months.
If you leave the meat for too long, you run the risk of it drying out. This is noticeable on the grainy, less juicy exterior of the meat. It's a shame to let this happen. To prevent waste, this time we make a delicious, rich hamburger tomato vegetable soup.

Ingredients:
- 4 hamburgers
- 2 onions - in half rings
- 150 gram peas
- ½ Cauliflower - in little roses
- 150 gram green beans
- 5 celery sticks - in slices
- 1 ltr beef boullion
- 1 winter carrot - grated and sliced
- 1 tin can tomato paste
- 400 gram diced tomatoes - canned
Herbs and spices
- 2 el persillade spice mix
- peper
- salt
- 1 el paprika powder
- 1 el garlic powder
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Grab your skillet and put your burgers in it. Use a wooden spoon to push the meat apart while cooking until you have small chunks of meat. Add the can of tomato paste and all the herbs and spices. Bake for a minute or two.
- Cut/chop the carrot, celery, onions and cauliflower as described above.
- Grab your stockpot and spoon the meat into it. Add the vegetables and cook for five minutes.
- Pour in the stock and the diced tomatoes, bring to the boil and simmer over low heat for about twenty minutes.
- Serve with some baguette.
