These muffins are very easy to make. All you need is a muffin tin, skillet, bowl, and whisk. You first fry the bacon crispy in the frying pan and cut it into pieces. Then divide the bacon, grated cheese and finely chopped vegetables (I used bell pepper, onion and mushrooms, but you can also use other vegetables) over the muffin tins. Then you beat the eggs with some milk, salt, pepper and herbs (I used parsley, chives and oregano, but you can also use other herbs) and pour the mixture over the filling. Then you bake the muffins in the oven until they are golden brown and cooked through.
You can eat these muffins hot or cold. You can also freeze them and reheat them later in the microwave or oven. They are perfect for a quick breakfast, brunch, lunch or snack. You can also take them to work or school. They are nice to eat as is, or with some ketchup, mustard or mayonnaise.
