As you know, I don't shy away from a challenge, and this time the tomato is in the leading role! We eat quite a lot of tomatoes, just think of your salad, tomato sauce with pasta, on your sandwich with a slice of cheese and so on. A super versatile vegetable that is widely grown in the Netherlands. You might think, what is the challenge? During the Prominent Tomato Times Challenge I took the challenge “Make a breakfast with tomatoes that children will also like”. When you think of breakfast for children, it should be easy and preferably also look nice. Maybe not a recipe for a quick weekday, but certainly a nice one for the weekend. We are going to get started with this delicious savory breakfast cruffin with tomato. Yes, a kind of breakfast muffin made from croissant dough with tomato processed in it. We skin the tomatoes so that we are left with only the soft flesh. Ideal for this fine cruffin recipe.

In this cruffin recipe we use bacon, but if you want to make it vegetarian, you only have to leave the bacon out. So you see that you can also eat tomatoes very well for breakfast! Did you know that not every tomato is just the same tomato? The breeders have specially bred for different characteristics. Snack tomatoes are of course nice and small, but they also contain less moisture. If you bite it open, you don't immediately have your mouth full of seeds. Especially great for kids. The truss tomato is again somewhat larger, but with firm flesh. We have therefore used this for this savory breakfast cruffin with tomato.

Skinning is really childishly easy. You put a cross on the convex side of the tomato. Place it briefly in a pan of boiling water. Then scoop it out and let it cool for a while. Then you just pull the sheet off! Remove the seeds from the inside, leaving the soft flesh to roll in the cruffin!

You need:

Ingredients:

  • 2 vine tomatoes
  • 6 slices of bacon
  • 100 gram grated cheese
  • 1 can of croissant dough - from the cool shelf e.g. Danerol
  • 2 fresh parsley sprigs
  • cooking spray - from, for example, Dr Oetker

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take the pan and put a liter of water in it and bring to the boil. Put a cross on the convex side of the tomato. (Not the part where the crown is). Scoop the tomatoes into the pan with a slotted spoon and let them soak for a few minutes. You will see that the sheet tears. Remove them from the pan with the slotted spoon and let them cool for a while.
  • Peel the skins off the tomatoes, cut them into quarters and remove the seeds. Cut the pulp that remains into small cubes.
  • "Plop" open the croissant dough tin and roll out the dough. The dough is already divided into three pieces. Close the holes. Place a slice of bacon, some diced tomatoes and grated cheese across the width of the dough. Roll up.

  • Preheat your oven to 180 degrees.
  • Cut the roll lengthwise down the middle and roll up.
  • Spray some baking spray in your muffin tin and gently push the cruffins into the ramekins. Sprinkle some more cheese on the cruffins.
  • Place in the oven for 15 to 18 minutes until the dough is golden brown.
  • Serve with some more tomato on top and some fresh chopped parsley.
  • Delicious bites!
