With the holidays approaching, a beautiful dish like this hasselback zucchini in tomato lentil sauce is also a hit on the table. and otherwise a very nice side dish on your table. I already have a beautiful hasselback pumpkin on the site and now also a zucchini. The most useful trick for cutting is to place the vegetable between two ladles. If you cut then you cannot overshoot. This way the vegetables remain whole but cut into beautiful slices. This fantastic oven dish also fits perfectly on your table!
Hasselback zucchini in tomato lentil sauce
The idea for this oven dish comes from Tesco. That's an American supermarket chain. I have adjusted this hasselback zucchini in tomato lentil sauce quite a bit. I was scrolling a bit on Pinterest and I came across a photo. In my fridge were some small courgettes that had to be used and I still had lentils in the pantry.
And so you can be inspired by seeing a photo to make a delicious dish. On Facebook I often see calls for “what to do with this or that vegetable” in all kinds of cooking groups. With a little imagination you can actually make a beautiful dish out of anything!

Hasselback zucchini in tomato lentil sauce

Ingredients:
- 1 blik lentils (400 gr)
- 3 small courgettes
- 1 white onion
- 3 toes Garlic
- 1 blik tomato pulp 400 grams - (mutti)
- 4 el green pesto
- 75 gram Parmesan cheese - grated
- 50 gram panko
- 1 Spanish / chili pepper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees.
- Take the courgettes and place them one by one between two wooden spoons. Cut in until you hit the wood. This way you get nice notches and you don't accidentally cut it all the way through.
- Chop the onion, garlic and red pepper. Take your frying pan and fry the onion in some olive oil until translucent. Add the garlic and red pepper. Pour in the tomato pulp and stir.
- Place the lentils in a colander, rinse and drain briefly. Add to the sauce and spoon into a baking dish. Season with salt and pepper.
- Place the courgettes on top of the sauce and spread the pesto on top. Make sure it gets into the notches as well. Place in the oven for 30 minutes.
- For the last five minutes, sprinkle the cheese and panko on the zucchini and return the dish to the oven.
