You can really make them in all flavors, but they are often huge calorie bombs… You may know the “millionaire's shortbread” version with caramel and chocolate. If I just look at it I will gain a kilo haha. Now this hazelnut coconut blossom sugar spelled flour shortbread is not sugar-free either, but perhaps just a little healthier. In any case, a snack or snack like this is a treat and you should not eat it every day. But every now and then we can tickle ourselves, right? Sunday baking day, so get started!

Shortbread is a traditional Scottish biscuit made with lots of butter, sugar and flour. It has a crumbly texture and a rich buttery taste. The original shortbread recipe comes from England and is often served with tea or as a dessert. In this recipe we give a healthier twist to the classic shortbread by replacing a number of ingredients with more natural alternatives. For example, we use spelled flour instead of patent flour, because spelled flour contains more fiber and protein than regular flour. We also replace the butter with coconut oil, which has less saturated fat and gives the cookies a nice tropical flavor. Furthermore, we do not use granulated sugar, but coconut blossom sugar, which has a lower glycemic index and has a kind of caramel-like taste.
This means we don't have to add a thick layer of caramel to the shortbread, which would make it even sweeter and more caloric. You can also make this hazelnut coconut blossom sugar spelled flour shortbread with other nuts. You could also opt for pecans or almonds, which also contain many healthy fats and minerals. Ingredients:
- 175 gram spelled flour
- 80 gram coconut oil - molten
- 3 el agave syrup
- ¼ tl sea salt
- 1 tl vanilla essence
- ½ bag baking powder
For the caramel nut topping:
- 60 gram coconut blossom sugar
- 80 gram agave syrup
- 200 gram hazelnuts - chopped
- ½ tl coarse sea salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 175 degrees.
- Grab a bowl and put all the ingredients for the bottom in it. Mix with a fork until you have a crumbly dough.
- Line your square baking pan with baking paper and press the dough into the bottom with your fingers. Make sure everything is evenly distributed over the entire can. Place in the oven for 6 minutes. Then take it out and let it cool down.
- Meanwhile, chop the hazelnuts.
- Take a pan and add the coconut blossom sugar with the agave syrup and over a low to medium heat let the sugar dissolve while stirring, when it starts to bubble add the nuts and stir for a while. Pour or scoop it onto the biscuit base. Do this quickly because the sugar will set again fairly quickly. Distribute well over the entire bottom. Sprinkle with some coarse sea salt.
- Return to the oven for 18 to 20 minutes. Remove from the oven and let cool gently. After an hour you can remove the block from the mold and cut it into 16 small cubes.
