Romance, cheese and wine. Hello Valentine!

Red is possible, match it in the right way!

The combination of the right wine with a cheese board raises some questions for some people. I'll get straight to the point: red wine and cheese are generally not a good combination. With the exception of hard cheeses that contain salt crystals, this is nice. But what does match? So many kinds of cheeses, so many kinds of wines. To keep it clear, I have described the wine-food combinations of wine and cheese per cheese category.

White crust cheeses & wine

Brie, Camembert, Boursault, are some examples of white rind cheeses. These cheeses can be perfectly combined with wines made from Riesling or Sauvignon Blanc grapes. A delicious white wine also fits perfectly with the stuffed camembert!

Goat or sheep cheese & wine

This tastes great with a glass of Sauvignon Blanc from the Loire. The tartness of the Sauvignon Blanc grape is important in the game of tension in this one. Goat cheese in particular is very dry and sharp. That is why these cheeses require a smooth dry wine with a fine acidity.

Hard cheeses & wine

Choose a gemmy red wine here. Juicy and without tannins such as a Syrah or Appassimento.

Blue vein cheeses & wine

The best combination with blue cheese is port. A cheese with a very pronounced taste requires a drink with a pronounced taste as a counterpart. The saltiness of the cheese is delicious with the sweetness you taste in the port. Of course you can also opt for a red wine here. Then stick to the Syrah or Appassimento. The tannins in wine are not nice with the spicy cheese, so that's why this choice.

Red crust cheese & wine

Choose a white wine with a sweetness, such as the Gewurztraminer. What's really fantastic, I was able to taste this combination myself once and you don't know what hit you… That is a Gewurtztraminer Selection de yarns nobles. Not for every wallet. About a hundred euros for half a bottle! But if you ever get the chance, I'd grab it with both hands. As if the proverbial angel is pissing on your tongue!

Delicious cheese and wine for Valentine's cheese board

The perfect cheese board for this “delicious cheese and wine for Valentine's Day”.

A perfect cheese board consists of a maximum of 5 types of cheese. Dried fruit, something sweet such as honey and possibly nuts. To be completed with toast or baguette. To make it easy for you, below is an example cheese board with selected wines. The numbering is in the order of eating, from creamy-soft to spicy and pungent.

1:

Stuffed camembert with cranberries (like the recipe below) or Brillat savarin, a white rind cheese. Brie-like cheese made from cow's milk, creamy in taste with a hint of mushroom. We drink Sauvignon Blanc from the Loire with this.

2:

A Crottin de Chavignol from the village of Chavignol, Loire. Serve this cheese with a little honey. And of course we drink the Sauvignon Blanc from the Loire happily with this. Our recommended wine comes from the Coteaux du Giennois area, nearby Sancerre and Pouily Fumé. The Sauvignon Blanc grows here on Silex soil, which gives the wine a smoky and dusty taste. You need the sharpness of the Sauvignon Blanc to cope with the dry and sharpness of the goat cheese. This wine has the same characteristics as Sancerre and Pouilly Fumé, only it is much more affordable.

3:

Old Amsterdam, we all know this one... With this you drink a red wine with a high fruit content and hardly any tannins such as a Syrah.

4:

Gorgonzola, a full-fat cow's milk cheese from the north of Italy. There are two types of Gorgonzola, the dolce and picante, the picante is most suitable on the serving board because the dolce becomes completely soft and melts at room temperature, it is better to use it in dishes. The picante is more crumbly and more intense in taste. The whole evening at the port can be a bit intense. So you can choose here to continue the evening with the Syrah.

5:

We conclude with Munster cheese from the red rind category. A real stinky cheese that smells like manure with a sharp taste and salty rind. Don't let this put you off! It's really tasty. This cheese requires a sweetener as a counterpart. We choose the Gewurztraminer Weingut Gretzmeier here. Tip: dip your Munster cheese in cumin seeds for an optimal experience.
