Of course you can, but in this recipe I want to show you that it really isn't that much work. And quite honestly, with the homemade mayo that really takes you less than 4 minutes to make, it tastes just that little bit better! Egg salad prepared with care is healthy. The egg of Columbus salad with bacon is definitely a classic and a favorite of mine.

And this is how you make the egg of Columbus salad with bacon:

We start with the mayo, it is so tasty and so easy to make yourself! First boil the egg for 3 minutes and then quickly drain it under cold water. Take a measuring cup and drop the egg into it. Then add the tablespoon of mustard and grab your immersion blender. Start mixing and then slowly add the 50 ml sunflower oil. You will see that a delicious soft mayo is created. Season with some salt and pepper and refrigerate until ready to use.

Making the salad

Peel the cucumber and remove the seeds from the center, then cut into cubes. Also peel the apple and cut into small cubes.

Clean the red onion and chop it, cut the gherkins into small cubes. While you're doing all that, hard-boil the eggs and fry the bacon bits. They don't need to be baked completely.

Ingredients:

  • 3 eggs - hard-boiled
  • 15 cm cucumber
  • 1 Red onion
  • 3 pickles
  • 1/2 call
  • peper
  • 2 bacon bits - cut into coarse cubes

For the mayonnaise you will need:
