Today I have a very special recipe for you: Anouk's favorite recipe from Anoukskookboek. Anouk is a dear friend of mine and a great food blogger. Anouk showed me and tasted her favorite recipe: the black bean burger. This is a vegan burger that you can make from scratch with healthy and tasty ingredients. You don't need a meat substitute to enjoy a good burger, as this recipe proves!

Anouk made this black bean burger with black beans, sun-dried tomato, olives and herbs. That gives the burger a lot of flavor and spice. You can bake the burger in the oven or in the pan, whatever you prefer. I served the burger with a fresh salad of zucchini, tomato, cucumber and pine nuts. And of course a delicious sauce of yogurt with mint.

Ingredients:

  • 1 tin can bean mix
  • 200 gram frozen broad beans
  • 1 Bowl wheat flour
  • 1/2 lime - twigs
  • olive oil
  • 1 tomato
  • 1 head of lettuce
  • 2 Hamburger Buns

The spice mix for the burgers:

  • 3 sprigs of fresh thyme - the leaves
  • 1/2 teaspoon Italian herbs
  • 1/2 tray fresh coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper

The salad we put on the burger

  • 1 biet - cut
  • 1 root - cut
  • 1 white onion
  • yoghurt
  • 2 teaspoons mustard
  • peper
  • salt

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First grab your food processor, add the drained can of beans, the frozen broad beans, the juice of the lime and the spice mix for the burgers. Pulse this with your machine until you have a nice mix. You may still see some pieces of bean, it does not have to be turned all the way into a pulp. Then add the bowl of wheat flour and mix it through the bean mixture.
  • Sprinkle some flour on your work surface and scoop the bean mixture on top and form a nice ball. As you can see in the video, we then make four equal parts of it and form it into burgers. Place them on a plate with some baking paper and then they can go into the fridge to stiffen up a bit. About 10 minutes.
  • While they are in the fridge we make the salad. Clean and chop the onion and put all the vegetables in a bowl. Add some yogurt and mustard and toss everything together. Season with some salt and pepper. If you have some left over, just use it for another day.
  • Then we're going to fry the burgers. Grab your frying pan and add a good splash of olive oil. When it is hot, place the burgers in it and fry them on medium heat for three minutes on both sides.
  • Finally, when the burgers are nicely crispy, remove them from the pan and we start building the buns. Toast your buns briefly and spread both sides with some mayo and ketchup. Place some lettuce and tomato on the bottom bun, then the burger and finally a little salad. Stick a nice prick
