And this is how you make the tomato stew:

-Preheat the oven to 200 degrees.

-First take a cutting board and finely chop the onion. Also finely chop the 3 cloves of garlic.

-Put your stewpan on the fire and let it come up to temperature for a while, then add a dash of sunflower oil and heat it. Place the garlic with the chopped onion in the pan and let it become translucent.

-Add the tomato paste and mix well. Season with some salt and pepper. Then add the thyme. Remove these leaves from the twig with your fingers and add them to the pan. This is also the time to add the herbs and then the tin with the peeled tomatoes. You can push these apart with a wooden spoon and stir well through the stew. Finally, we add the chicken pieces to the stew. Then: cover the pan and let it simmer for 20 minutes on low heat.

-Meanwhile, we cook the rice until done and roast the tomatoes on the vine in the oven.

-Finally take the plates and put a nice cooking ring in the middle. Put the tomato stew in it. Scoop the rice around the ring, when the plate is nicely full, remove the ring and you have a super nice plate. Garnish with the tomatoes and some fresh thyme: Delicious Happen!

  • Want more spice? Then add some Cayenne pepper.
  • More of a carnivore? This stew is also delicious with bacon, fry it first and then fry the onion and garlic in the fat of the bacon. (That sounds really nice to me!)
  • Luuk is a real herb man, so vary with other fresh herbs!

Ingredients:

  • 1 large white onion
  • 1 blik peeled tomatoes - 800 ml
  • 70 gram tomato paste
  • 5 twigs fresh thyme
  • 3 toes Garlic
  • 2 tablespoons Italian herbs
  • 200 gram uncooked rice
  • 1 package vegetarian chicken pieces
  • 1 twig truss of tomatoes
  • sunflower oil
  • peper
  • salt
