And this is how you make the well-filled lunch wraps with eggplant:
-First you make a tasty pesto from all the ingredients for the pesto. Put this in your food processor and turn it into a delicious creamy pesto.

-We will then move on to the aubergine. Take a grill pan and heat it well. Cut the aubergine into slices and then put some olive oil in the grill pan. Grill the slices for 3 minutes on both sides. Season them with some salt and pepper.
-Take your wraps with it and spread it with the fresh pesto and then scoop the cottage cheese on top, divide over the wrap.
- Cut the sun-dried tomatoes into pieces and divide them over the wrap together with the arugula and the sprouts.
- Finally, place the grilled aubergine slices on top and sprinkle them with the roasted pine nuts.

- 1/2 Eggplant
- 2 tablespoons fresh pesto
- 4 tablespoons hutkäse
- 4 Sun dried tomatoes
- 1 handful rocket salad
- 1 handful fresh sprouts
- 1 handful roasted pine nuts

- 200 gram broccoli
- 75 gram Parmesan cheese
- 1 citroen - juice from
- 125 ml olive oil
- 30 gram basil leaves
- salt
- peper
- 50 gram soaked almonds
