Dutch new herring! They're back and they're so delicious this year! It's always a nice moment when I can buy them from my regular fishmonger. And although it is very tasty straight away, you can of course also make a bit more work of it. So now this Dutch new one on rye bread. That bread is full of dietary fiber and iron. Did you know that rye bread actually needs more cooking than baking? Due to the low temperature, it can be baked in the oven for between two and four hours. The Frisian and Groningen variants can last up to twenty-four hours! Although sometimes quite heavy in taste, the bread is still easy to digest. Rye bread with Dutch new herring recipe

Unfortunately, very few people eat the rye bread these days. You have to love it of course. In this recipe we add an Amsterdam sour onion, and the sweet beet mousse gives it a soft taste.

This is how you make the Dutch new one on rye bread

- First boil the green peas with salt for 3 minutes.

- Cut the precooked beets into cubes and save some for the rye sandwiches, then use the rest to make the mousse.

-Take 2 tablespoons of crème frache and puree it with the cooked green peas until smooth, then season with salt and pepper.

- Repeat this process one more time for the beetroot mousse.

-Take a rye bread and spread the pea mousse on it, then put the Dutch new herring on it.

- Sprinkle some chopped shallot on the Dutch new herring and add the beetroot cubes, garnish with the Amsterdam onion and pickles.

-Make your plate with the Dutch new herring nicely with a few drops of beetroot mousse
