Ireland has a complicated food history. It is, of course, an island through which a lot has to be imported, and it has certainly experienced severe famine for a long time. The mass emigration to America has also started as a result. The bread was invented around 1830 and does not use yeast but baking soda. Because it is a bread that requires few expensive ingredients, it can be baked quite easily and could itself feed the poorest mouths.

Wheat flour is widely grown in Ireland because of the climate there and is therefore the main ingredient of this bread. In ancient times it was baked in cast iron pans over an open fire. Enjoy irish soda bread raisins!

Ingredients:

  • 500 gr wheat flour
  • 375 ml buttermilk
  • 75 gr butter - cold cubes
  • 60 gr sugar
  • 1 tl baking soda
  • 1 tl salt
  • 125 gr raisins
  • 1 ei

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 190 degrees.
  • Take a bowl and add the dry ingredients first, mix everything well.
  • Add the cubes of butter and knead them all the way through the flour so that they become small grains.
  • Add the raisins and toss.
  • Now add the egg and buttermilk and mix very briefly with a food processor (hand mixer) until a coarse cohesive dough is formed. Do not mix for too long, the whole remains very coarse and grainy.

  • Flour your work surface and scoop the dough from the bowl, form a ball of the dough. Note it is very "sticky", so flour your hands so that it sticks as little as possible.
  • Spray some baking spray on your quiche tin and place the bread on top. Cut a cross on top of the bread with a knife.
  • Place in the oven for 40-45 minutes until golden brown on the outside.
  • Let it cool for a while before slicing it.
  • Delicious bites!
