I was lucky that my sauce was already completely ready, which sped up the process considerably and allowed me to present a tasty and colorful plate that is both satisfying and appealing to the eye.

Ingredients:
- 2 eggs
- 1 avocado
- 1 can of black beans
- 1 can of bean/corn mix
- 2 tortillas
- 200 ml bell pepper or tomato sauce
To top off with:
- olives
- Spanish / chili pepper
- cheddar cheese
- Parsley
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Place the cans of beans in a colander and rinse them briefly under the tap. Drain and then add to a frying pan with a little olive oil. Fry them on a low heat.
- Heat the paprika sauce in a pan.
- Fry two eggs in a frying pan. Extra spice? Then fry them in a chili oil.
- Bake the tortillas in a frying pan, it is not necessary, they are less crispy but just as tasty.
- Spoon the beans onto the tortilla, top with the fried eggs and then the sauce.
- Top with sliced avocado, red pepper pieces, green olives, cheddar cheese and parsley.
