Summer or winter, I like to drink ice tea. In the summer, certainly with some extra ice cubes. Of course there are many brands of ice tea in the supermarket, but making it yourself offers more variety options. Especially in your choice of different types thee and the sweetener. I personally prefer a natural sweetener like honey. I was asked to make a nice recipe using organic honey. I was sent a box with different types of honey such as the acacia and linden honey. The French lavender honey really stood out for me. I got to work and made this delicious homemade lavender honey lemon ice tea.
And this is how you make lavender honey in tea:
First we are going to make a kind of honey syrup. Take a saucepan and add 500 ml of water and 150 ml of lavender honey. Put it on the stove and bring to a boil over low heat. It shouldn't be bubbling too hard, so stand by it for a while. Let it simmer very gently for a minute or 5. Remove from the heat and let it cool.
Heat 500 ml of water and make tea for the lavender honey in tea. I opted for chamomile tea. Together with the lavender honey, this gives a wonderfully soothing effect. Also let the tea cool completely.
Squeeze 1 of the two lemons and put the juice in a pitcher. Add the honey syrup and the tea to this and stir it all together. Add ice cubes to the pitcher and it is ready to drink.

Serve the lavender honey in tea in a glass with a nice slice of lemon. In my glasses in the photo you see an ice cube in which I have frozen chamomile flowers and lavender tops for an extra wow effect in your glass.
