Making cherry jam, or any other kind of jam is super easy. And the big advantage at the supermarket is that you can get started with all kinds of spices and herbs. I often serve a jam with a cheese board. This homemade sweet cinnamon cherry jam is certainly suitable for that. Of course you can also use this jam for a jam pie or a Limburg flan.
I can strongly recommend that you pay a visit to the Betuwe and buy your cherries directly from the farmer. The area is beautiful and there are cherry stalls everywhere along the road. Then you will taste that these really taste better than the ones from the supermarket. Be quick because the season is short! End of June to about mid-August and then it's already over.

- 500 gram cherries - pitted
- 500 gram jelly sugar
- 1 citroen - squeezed
- 2 cinnamon sticks
- ½ tl biscuit spices

And this is how you make it:
- Put a saucer in the fridge before you start, we can do the clotting test on this later.
- Remove all twigs from the cherries and wash them. Take your de-pitter and pit the cherries. Then cut them into quarters.
- Take a pan and add the cherries and the juice of 1 lemon, and the gingerbread spices and bring to the boil. Add the sugar and cinnamon sticks and stir well. Let it cook for 4 minutes. With your immersion blender, puree the jam until you have no large pieces left. (remove the cinnamon sticks from the jam)
- Take the saucer out of the fridge and spoon a little jam on it, let it stand for a minute. (In the meantime, let the jam in the pan stand on a minimum heat) Tilt the saucer, if the jam remains, it is well set. If it drips too much, cook the jam in the pan a little longer.
- Remove the cinnamon sticks from the pan and pour the jam into the 2 sterilized glass jars. Fill almost to the brim. Screw the lid on and turn it upside down for about 5 minutes, then turn it back and let it cool down further.
