Irish steak and potato chips: a delicious snack from the oven

When I think of Ireland, a number of things immediately come to mind. Irish beef, steak, that's for sure, but also potatoes. Perhaps you still remember from your history lessons and you know that Ireland experienced a great famine. The potato harvest failed and millions of Irish people were forced to leave their country. If you look at the Irish landscape now, you will see miles of green pastures where Irish cows graze to their heart's content, and many potatoes are still grown. I made this Irish steak and potato chips recipe in collaboration with Irishbeef.nl and BordBia. This year I can go on a press trip and visit the farmers themselves! So more about that later.

We all eat a lot less meat than before and that's fine too. We increasingly opt for a good piece of meat that is of excellent quality. If I may choose then I would like meat with a lot of flavor. The big secret of Irish beef is in the feed that the cows eat. And that's grass!

The Irish cows spend an average of 220 days a year outside and eat grass. The days they are indoors they eat hay and grass silage. So in total 90% of their diet is Irish grass. The cows live outside on the vast green pastures and enjoy the salty Irish air and the juicy grass that gives the meat so much flavor.

This Irish steak and potato chips recipe basically has very few ingredients. You will probably have most herbs and spices at home. A nice meal that you can make on the weekend. You prefer to use Guinness beer for the sauce, but if you don't have it at home, you can also use beef stock.

You need:

Ingredients:

  • 4 big potatoes - slightly crumbly
  • 350 gram Irish steak

For the potatoes:

For the meat marinade:

  • 60 ml soy sauce
  • 1 el Sriracha sauce
  • 1 el olive oil
  • ½ tl chili flakes

For the meat sauce:

  • 2 el butter
  • 2 shallots - finely chopped
  • 3 toes Garlic - finely chopped
  • 1 el French mustard
  • 1 tl thyme
  • 1 el lemon juice
  • 150 ml Guinness beer - (or 150 ml beef stock)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the potatoes in half and then each half lengthwise again into three pieces. This way you get nice long "wedges".
  • Preheat your oven to 200 degrees.
  • Place the wedges on a baking tray lined with baking paper. Mix the olive oil with the herbs and spices (do not sprinkle the parsley until they are ready). Pour over the wedges and toss the potatoes. With your microplane, grate the Parmesan cheese over it. Place in the oven for 35 minutes and toss again halfway through.
  • Cut the Irish beef into strips. Place the marinade in a bowl and let the meat marinate for XNUMX minutes.
  • Melt a tablespoon of butter in the frying pan and briefly(!) fry the strips of beef. We definitely don't want them to be overcooked! Scoop them into a bowl with a slotted spoon and cover with a lid or aluminum foil.
  • In the frying pan, fry the shallots and garlic in the remaining fat for a few minutes. Then add the mustard and deglaze with the Guinnes beer. Add the thyme, butter and lemon juice and stir everything well with a wooden spatula. Let the sauce simmer for a few minutes over medium heat.
  • When the potatoes are ready, take them out of the oven and put them on the plates.
  • Return the meat to the frying pan with the sauce and heat briefly. Place the sauce on the plates with the potatoes and sprinkle with the parsley.
  • Delicious bites!
Be careful with salt! The soy sauce in the marinade is salty by itself and the Parmesan cheese is also salty with the potatoes. You'd better sprinkle some Celtic sea salt over the potatoes and meat once you've tasted it.
