My hairdresser noticed that I've been making a lot of recipes with pumpkin lately. And that is also true because a frequently heard comment is: “pumpkin is delicious, but what should I do with it….”. Because we don't only eat large pieces of meat during Christmas, but also delicious vegetables, I made this maple syrup grilled pumpkin with walnut. Maple syrup or in English Maple syrup is made from the sap of the maple tree. During the winter, the tree stores sugar in its roots, which then flows upwards through the bark in the spring. By collecting and concentrating this juice you get this syrup. The vast majority are produced in Canada. They have even incorporated the maple leaf into their flag. It is often served with those thick pancakes, poffertjes or with French toast.

For the production of 1 liter of syrup 40 liters of sap from the tree is needed. An adult maple tree gives this amount every 4 to 6 weeks. Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat the oven to 200 degrees
  • Cut the pumpkin lengthwise (save the other half for a soup, for example), peel the skin off with a vegetable peeler and chop into small cubes.
  • Strip the leaves from the rosemary sprigs and chop finely. Roughly chop the walnuts.
  • Place a piece of baking paper on a baking tray and spoon the pumpkin cubes on it. Sprinkle with the salt and cinnamon and pour the syrup on top. Toss so that there is a layer all over you.
  • Place in the oven for 10 minutes and then take out, add the walnuts and cranberries and then return to the oven for another 15 minutes.
  • Remove from the oven and scoop into a bowl, sprinkle with the fresh rosemary and serve.
