Christmas used to mean a dinner with cranberry sauce, potatoes, Brussels sprouts and a nice piece meat. Mostly wild because according to my father that was part of Christmas. One year a few delicious pheasant legs and then another piece of rabbit or hare leg. Sadly, my father passed away this fall and these dinners will be a thing of the past. My mom isn't much into game, though, so I got from her freezer the pieces of game my dad already had ready for this year's dinner. Leg of hare stewed in beer
The main ingredient for a good stew like Leg of hare braised in beer, is: time! Likewise for this one beer stewed hare leg. The longer the better, and on a nice low heat. My father used to put them on a kerosene bunch and let it simmer for hours and hours. Ingredients:
- 2 hare legs
- 150 gr chestnut mushrooms
- 150 gr smoked bacon cubes
- 1 big branch thyme
- 1 bottle Guinness beer
- 1 can game stock 400 ml
- 3 shallots
- 2 bay leaves
- salt
- peper
- 3 toes Garlic
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Make sure your bolts are at room temperature. Season them with salt and pepper and sear them in a frying pan.
- Finely chop the shallot, the mushrooms into quarters and the garlic into small pieces.
- Remove the thighs from the frying pan and place them in the casserole.
- Quickly and over high heat, fry the shallot and bacon, mushrooms and garlic in the fat in the frying pan. Scoop everything from the pan to the legs in the stew pan.
- Add the beer and the game stock and put on a simmer. Add the bay leaves and thyme and put the lid on the pan. Simmer gently for two hours.
- After the two hours, scoop the meat with the mushrooms and bacon from the pan into a bowl, cover and leave in your oven on keep warm.
- Strain the sauce that is left in the pan, you can make a fantastic gravy by letting it boil down to ⅓ on high heat after sifting.
- Serve the hare leg with, for example, a nice puree and pour in some of the gravy.
