Lamb is a treat for me, because it is not very cheap. Now I prefer to buy a very nice piece meat and eat vega another day than when I start the kilo bangers. Now I was lucky enough to be invited to a very nice press dinner by Crisp. After dinner we all received a wonderful credit to use in the webshop. I looked around a bit and my eye fell on this leg of lamb. Ideal to use for Christmas this year! Lamb and persillade go very well together and let me be a very big fan of this spice mix…. Oven-cooked leg of lamb with persillade.
Temperature and knowing how hot it is in the oven are very important with the leg of lamb with persillade. Of course you don't want it to fail and overcook the bolt. And the old saying “to measure is to know” comes in handy here. Now I own a very nice oven with, for example, a rotisserie, drying function and also a thermometer.
You plug this into the oven on the side and set exactly the core temperature you want the meat to be. And then the oven does the work for you! If you don't have that kind of oven, you will have to use a separate thermometer. With this handy feature you don't have to worry about reaching the right temperature.
It's an easy solution that can help you prepare perfectly cooked meat. Whether you have an advanced oven or a simple thermometer, you can always enjoy delicious meals.
You really can't guess what the meat looks like on the inside by how brown it looks on the outside. And if you like frying large pieces of meat, it will certainly come in handy another time! A good investment for your kitchen.

Oven-cooked leg of lamb with persillade

Ingredients:
- 1 Leg of lamb - (mine weighed 800 grams)
- 2 el Persillade (spice mix)
- 3 twigs thyme
- 3 toes Garlic
- 60 ml extra virgin olive oil
- 2 twigs rosemary
- salt
- peper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Please note the times indicated here are an indication. You really have to check your thermometer to see if and when the meat is cooked and has the correct core temperature.
- We first make the persillade-herb rub. Remove the leaves from the thyme and rosemary sprigs and place them in a measuring cup. Remove the skin of the garlic and add this too. Add the persillade and pour the olive oil into the cup. Take your immersion blender and puree until you have a smooth green sauce.
- Season the leg with salt and pepper and place in a bowl. Pour the spice mix on top and massage the entire leg with it on all sides. Now let it marinate overnight in the fridge.
- The next day, take the leg out of the fridge in plenty of time to let it come to room temperature and then preheat your oven to 180 degrees.
- Stick the thermometer in the center of the meat (not on or against the bone) and set the core temperature of your oven to 56 degrees. Close the oven and wait! If you have inserted a separate thermometer into the meat, check every now and then at how many degrees it is.
- At the end I briefly put the bolt under the grill on both sides, and then let it rest for fifteen minutes. (The meat will continue to cook then)
- Serve with a fine cranberry sauce
