Ireland. Have you ever been there? What a beautiful country that is. We have a very special memory of it because we celebrated our honeymoon there. That's why I wanted to honor this country and our fond memories with a real Irish recipe on my site. And what could be more Irish than an Irish stew with soda bread? We feel we have actually been there way too short. It is therefore certainly on the schedule to do a round trip along all the beautiful places and landmarks. In the stew I use leg of lamb. Unfortunately, that is not a very cheap piece of meat. I paid more than 1,3 euros for 25 kilos. Get started with this stew irish stew recipe.
The advantage is that it is a very large pot and you can eat it several times. You can also use beef stew to keep costs down.
And this is how you make it:
-We first make the stew, that takes the most time, at least in terms of cooking of course because it is on the fire for at least 4 hours! First cut the leg of lamb into cubes of about 2 cm.
- Grab a frying pan and put some oil in it, then fry the meat in parts in the pan until well browned. I say in parts because it's way too much to put in the pan at once. Set aside the cubes of meat on a platter each time. You just leave the fat from the meat in the pan.
-Clean the leek well and cut it lengthwise through the middle, then cut each 1 cm into pieces. Peel the potatoes and cut into chunks, do the same with the onion and carrot. Finely chop the garlic cloves.
-Fry the onion with the leek and chopped garlic for a few minutes in the lamb fat in the pan and possibly some extra olive oil. Then mix in the flour and fry for 3 minutes.
-Now deglaze it with the bottle of Guinness and add the stock, the carrot, the cubes of lamb and also the juice that is on the dish, and the bouquet garni and season with salt and pepper. Cover the pan, place it on a simmering plate and let it simmer! Minimum 4 hours. During the last half hour you add the potato cubes so that they are nice and soft when the stew is ready.
The soda bread
-Preheat your oven to 190 degrees.
- Take a large bowl and add the flour, baking soda, salt and caraway seeds. Mix this together and then add the well shaken buttermilk. With a rubber spatula, you fold the whole until all the ingredients are just mixed!
- Spoon it on your work surface that you have sprinkled with some flour, soda bread needs to be kneaded as little as possible so make sure it has a round shape. It will still feel very sticky. Cut a large X on top of the bread with a knife and then place on a baking tray lined with baking paper.
-Place in the oven for about 30 to 35 minutes until golden brown. Perfect for this stew recipe!
When the stew is ready, scoop it into nice bowls or, like I do, in a pan and cut the bread into nice thick slices. Of course you drink a good Guinness beer with the irish stew recipe and otherwise a good red wine; Delicious bites

- First preheat your oven to 190 degrees
