The Italian chiacchiere carnival cookies! Yes, Carnival is also celebrated in Italy! And the most famous carnival is of course the Venetian carnival, which is celebrated for almost three weeks. You probably know the movies with the historical fairytale costumes, concerts and boat parades.

In any case, it is not Carnival in Italy without chiacchiere! These sweet cookies have been made for hundreds of years during the start of Carnival. They are brittle cookies. These fried cookies are sprinkled with powdered sugar. In general they are called chiacchiere, which means a 'chat'.
In various regions of Italy, these delicious cookies are given special local names, reflecting the country's rich culinary tradition. Cenci and donzelle they are called in picturesque Tuscany, while Veneto is proud of them gale and galani. People enjoy it in gastronomically famous Emilia-Romagna frappe and sfrappole, and in charming Piedmont is known for its bugie (lies).
Whatever the name or shape – square, rectangular, diamond or knotted – these crunchy treats are a feast for the senses. All variants have a golden, crispy texture and a sweet, tempting taste. They are an essential part of local festivities and are a real treat on special occasions or simply with coffee.

Ingredients:
- 250 gram flower
- 1 ei
- 1 egg yolk
- 8 gram vanilla sugar
- 35 gram granulated sugar
- 10 gram baking powder
- 25 gram butter
- 15 ml White wine
- salt
- sunflower oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Place the flour, sugar, vanilla sugar, baking powder and a pinch of salt in a mixing bowl. Mix this together and add the egg and egg yolk in the meantime.
- Knead for 5 minutes and then add the white wine.
- Knead again for 5 minutes and then add the butter in parts. Knead for 10 minutes until you have a smooth dough.
- Knead into a ball and wrap in plastic wrap. Let it rest outside the refrigerator for half an hour.
- Then sprinkle some flour on the counter and roll the dough into a thin piece. You can also do this with a pasta machine. (the second to last position). Cut rectangles of about 3 by 10 cm from the dough with a ravioli cutter.
- In the rectangles also make three notches parallel to the long side.
- Grab a tall deep pan with a thick bottom. Fill this up to 2/3 with the sunflower oil. Heat it to about 170 degrees and fry the chiacchiere for a few minutes until crispy and golden brown. Fry up to 3 sheets at a time, they will become quite lumpy and expand!
- Drain on a paper towel and sprinkle with icing sugar.
