Celebrate the new year with these delicious profiteroles! Italian chocolate profiteroles are a very festive dessert! It is a tower of profiteroles, filled with cream and covered with dark chocolate. Profiteroles are actually a French dessert, but it originated in Italy during the Renaissance. The Italian Caterina de Medici brought this recipe from Tuscany to France. Profiteroles are perfect for the holidays or a special dinner. They are usually eaten around New Year's Eve. Please note, this is a recipe for more experienced cooks! They can really "drown" in the chocolate sauce... if you really don't like that, you can pour a little less on it. Finish with a nice whipped cream or some powdered sugar.
If you're not a fan of pastry cream, as used in this recipe, there is always the option to fill the puffs with a delicious mascarpone whipped cream filling. You can simply whip up some mascarpone and whipped cream and add some icing sugar to taste to create a delicious mousse. You can then put this creamy mousse in a piping bag and use it to fill the puffs.
This way you can prepare a delicious variation on the original recipe, which will certainly appeal to lovers of creamy fillings. It's an irresistible twist on the classic treat!

Ingredients:
For the profiteroles:
- 62 ml water
- 55 gram butter
- 8 gram sugar
- 3 eggs
- 60 ml Full Milk
- 3 gram salt
- 77 gram flower
- 1 egg yolk
For the filling:
- 50 gram flower
- 6 egg yolks
- 150 gram sugar
- 500 ml milk
- 1 stick vanilla
For the chocolate sauce:
- 200 ml water
- 80 ml whipped cream
- 450 gram dark chocolate
- 150 gram sugar
- ½ tl salt

And this is how you make it:
Start by making the cream, it must cool in the refrigerator:
- Grab a pan and put the milk in it. Cut open the vanilla pod and add it to the pan. Let the milk heat up, but don't boil!
- Meanwhile, take a bowl and add the egg yolks, sugar and flour. Mix this well until it becomes a whole. When the milk is warm, remove the vanilla pod and add the egg, sugar and flour mixture.
- Grab a whisk and keep stirring on low heat. Stir until a nice smooth, thick cream is created. Pour the cream into a baking dish, cover with plastic wrap and refrigerate.
To bake the puffs:
- Grab a saucepan, add the water, sugar, butter (in cubes) and bring to the boil. Add the flour and stir with a wooden spoon. Now a lumpy dough is formed.
- Put the dough in a bowl and add 1 egg and stir well until the egg and the dough are a whole. Then continue 1 by 1 with the next eggs. Please note, the egg must be completely dissolved in the dough before you add the next one!
- Put the dough / batter in a piping bag and pipe small balls the size of a walnut on an oven plate (covered with baking paper). It is not a problem if long dots appear. Press it flat with the bottom of a spoon.
- Beat the egg yolk and brush the balls a little with it. Place the baking tray in the oven at 220 degrees for 15 minutes.
- Then insert a wooden spoon between the lid or door of the oven so that it is slightly open. Then let the profiteroles bake in the oven for 15 minutes at 180 degrees. When they are done, let them cool on the counter on a wire rack.
The chocolate sauce:
- Chop the chocolate into small pieces. Put the water and sugar in a saucepan and let it heat up. When it comes to a boil, add the whipped cream. When it comes to a boil again, add the chocolate and reduce the heat to low. Stir well to create a chocolate sauce. Pour into a bowl and let cool to about 30 degrees.
Filling and finishing the puffs:
- Take the profiteroles and make a small hole at the bottom with the nozzle for filling. Put the cream in a piping bag and fill the profiteroles with it. Grab a grid and put a baking paper under it. Dip the profiteroles in the bowl with chocolate sauce and then place on the wire rack. This is best done with a fork. Drain briefly and then place the profiteroles on a platter. You can possibly make a tower out of it and decorate it with whipped cream.
