Bye ragazzi! As we know Italian summers can be hot, really hot! And to keep a cool head, the Italians eat a granita. This Italian granita al limone is semi-frozen ice cream with sugar and often a lemon flavour. It originates from the Sicilian kitchen, where they even used snow from the mountains in the very old days (when there were no freezers) and then flavored it with rose water.

The nice thing about granita is that you can vary a lot with flavors, but the most refreshing always remains the one with lemon. This way you will definitely keep your head cool! Fortunately, Francine has an ice cream maker, and we made this recipe in a jiffy. There is nothing better than seeing the ice crystals develop into the final granita in such a device.
We made the ice cream in an ice cream maker, but you can also make granita in a container. You have to scoop the ice cream every now and then. This takes more time than an ice cream maker. You can then scoop the ice cream with a fork, it may be coarse and grainy. Perhaps the granita from the ice cream machine is a bit more like a sorbet ice cream, but certainly not creamy because we do not use any dairy products.

Ingredients:
- 335 ml water
- 90 gram sugar
- 2 lemons - biological
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Put the water in the saucepan with the sugar and let it simmer for about 5 minutes. In the meantime, keep stirring a bit. After the 5 minutes, turn off the heat and let it cool.
- Meanwhile, grate the zest of the lemons and squeeze them. You need the juice and the grated peel (zeste).
- Sieve the juice just to be sure so that you don't have any seeds. You should have about 75 ml of juice left.
- Then add the juice and zest (lemon zest) to the sugar water and stir well. Then pour the mixture into the ice cream maker and let it run for about 45 to 50 minutes. The ice cream should end up being a bit crumbly.
- Scoop out of the ice cream maker and serve immediately!
