The title of this recipe might suggest that the mussels come from Italy. But nothing could be further from the truth because they simply come from Zeeland. Although “normal” we can be very proud of this typically Dutch product. I really like eating them. And this time we are going to prepare them the Italian way. I have had the opportunity to make a recipe for the Dutch mussel agency several times. In this recipe we do not cook the mussels, but we stir-fry them! Yes, you heard that right, just throw it in the wok and fry it. The oyster mushrooms make it a nice autumn recipe.

A jar should certainly not cost € 2. Then there is only "fake" truffle in it, or a truffle seasoning. I took this dish to my regular fishmonger and he totally approved it! You can't get a bigger compliment from a real fish connoisseur, can you?!

Italian mussels with truffle linguine

- 1 kilo Zeeland mussels
- 100 ml fresh cream
- 200 gram mussel vegetables
- 100 ml White wine
- 4 king oyster mushrooms
- 250 gram linguini
- 1 tablespoon black truffle tapenade
- fresh basil leaves
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take a pan and put plenty of water with salt in it, cook the linguine according to the package.
- Rinse the mussels under cold water, discarding any that are open or broken.
- Heat the wok and add some olive oil, stir-fry the mussel vegetables and the sliced king oyster mushrooms. When these are soft, add a small dash of wine, the truffle tapenade and the crème frache. Stir until you have a nice sauce. Season with a little salt and pepper.
- Drain the pasta and add it to the vegetable mix.
- Heat a second wok (if you don't have one, remove the pasta with vegetables from the wok and put separately in a bowl) with some oil and put the mussels in the wok. Fry them on high heat until about half open, deglaze with the wine. Then bake for a few more minutes until they are all open.
- With a slotted spoon, add the mussels to the pasta in the other wok and toss everything together.
- Top it off with the fresh basil.
- Delicious bites!

Ooh yum! The combination with truffle klinky delicious. I am very happy to participate During the pregnancy I did not eat mussels for a long time and after the birth it was quickly on the menu again. I don't want to let you know why I deserve them like why my husband deserves them. He never gets them. I don't like them and in our old kitchen the extraction was not good so I never made them for him. On holiday in France, he prefers to eat them every day, but that didn't happen…. we have now moved and we have good extraction and with the recipe I would like to prepare them for him. My son-in-law has offered to join him for dinner. For the wine I gladly sacrifice myself. And I make that tagliatelle for my daughter and myself with stir-fried vegetables. Also Italian so fits perfectly.
My sister deserves this because she is always there for everyone, also for me she loves mussels so it would be nice to surprise her with this!!!!
