Because you use oil and yogurt in this apple pie recipe, it stays nice and airy and soft. Even a few days after baking. On day 4 it tastes just as good as on day 1. It also contains a very special ingredient, namely limoncello. This in combination with the apple gives it a very fresh-sweet taste. We prefer to use Italian apples for this Italian apple pie, but you can also find plenty of fine apples in the Netherlands.

Limoncello is one of the most popular liqueurs from Italy and is also very much homemade. Traditionally, limoncello is made with lemons from the Sorrento area. Only limoncello made with lemons from that area may bear the name 'Liquore di Limone di Sorrente IGP. It is not difficult to make yourself, you just need some patience (about 5 weeks). I also made this cake with my own limoncello.

We are going to make a delicious Italian apple pie according to a secret family recipe!

Ingredients:

  • 375 gr flower
  • 130 ml olive oil
  • 250 gr granulated sugar
  • 175 ml low-fat yogurt
  • 2 eggs
  • 10 gr baking powder
  • 1 citroen
  • 30 ml Limoncello
  • 8 gr vanilla sugar
  • 2 apples
  • ½ tl salt

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Wash and peel the apples. Remove the core and cut one apple into thin wedges and the other into small cubes. 
  • Wash the lemon very well under warm water for 10 minutes. (If you use an organic lemon, this is not necessarily necessary.) Grate the zest of the lemon, then cut it in half and then squeeze it. 
  • Take a mixing bowl and put the flour, sugar, baking powder and vanilla sugar in it. 
  • Mix this with a hand mixer (or in a food processor) and add the olive oil, eggs, yogurt, lemon zest, lemon juice and limoncello while mixing. Add the salt last and mix until smooth.
  • Add the apple cubes and stir well into the batter.
  • Take the turban and grease it with butter. Divide the batter in the bundt cake and smooth with a spatula.
  • Lay the apple wedges flat on the batter and press them down slightly. Place the turban in an oven at 170 degrees for about 55 minutes.
  • Pierce the cake with a skewer to check if it is cooked. If the skewer remains dry, the cake is ready.
  • Delicious bites!
  Tip: serve with a little powdered sugar.
