Do you know jackfruit? I didn't know it yet, so I was curious about it. By invitation I drove to Amsterdam for a wonderfully hysterical food tour through the capital. We were transported in funny tuk-tuks and passed five different hotspots. After all this inspiration, we were asked to come up with a tasty recipe with jackfruit ourselves. Now you should know that this jackfruit has a bit of the taste of artichokes. My first idea was to make a smoothie, but I don't think that goes very well together. Making this dish is not complicated at all, it just takes some time in the oven.
-First remove the jackfruit from the can and rinse them in a colander under the tap.
-Clean the shallots and cut each shallot into three pieces. Clean the pumpkin and the celeriac and then cut them into cubes of 2 by 2 cm.
-Get a large frying pan with a high rim and heat it. Add some olive oil and fry the vegetables for a few minutes until they start to discolour a bit. Sprinkle with the herbs and some salt and pepper.

Soak the römertopf in cold water for half an hour. You can do this while working with the vegetables as described above.
Scoop the vegetables from the frying pan into the dish. Add the kidney beans and finally add the game stock.
Then the dish can go into the oven. You do not need to preheat the oven. Put it in the oven at 160 degrees for two hours. After the first hour, turn everything around.

Jackfruit is especially a convenient way to cook vegetarian or vegan. What to use to replace the wild fond? I think the romertopf is a fantastic idea and I eat vegetarian.
