  • 200 gram kidney beans
  • 200 gram White rice
  • 200 ml coconut milk
  • 3 spring onion - cut into rings
  • 500 ml chicken bouillon
  • 3 el Jamaican Jerk spice mix
  • 4 el olive oil
  • 1 ui - XNUMX onion - shredded
  • 2 toes Garlic - finely chopped
  • 1 lime - squeezed

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Marinate the chicken drums with the Jamaican Jerk spice mix and some olive oil and rub them well. Let them marinate overnight in the refrigerator.
  • Preheat your oven to 170 degrees.
  • Heat the stew pan and pour in the 4 tbsp olive oil, fry the chicken drums for 10 minutes, make sure all sides are nicely browned. Remove them from the pan and remove the extra fat that has been released in the pan.
  • Add the onion and garlic to the pan and fry until the onion is translucent. Add the lime juice, coconut milk and chicken stock and add the kidney beans and rice. Stir everything together well.
  • Divide the chicken drums in the pan and place it in the oven without a lid.
  • Bake the whole thing for 35 minutes, if at the end the moisture evaporates too much for your liking, you can put the lid on the pan.
  • Sprinkle the spring onion over the casserole and serve, delicious bites!
