Ingredients:

  • 2 cod fillets
  • 1 box mixed cherry tomatoes
  • 100 ml White wine
  • 4 toes Garlic - finely chopped
  • olive oil
  • peper
  • salt
  • 10 fresh basil leaves

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take the frying pan and heat it over high heat, add some olive oil.
    Sprinkle the cod with salt and pepper and fry it for 2 minutes on both sides. Carefully remove from pan and set aside on a plate until use.
  • Cut the tomatoes in half and finely chop the garlic cloves. (Or run them through a garlic press)
  • Heat the frying pan and add a little olive oil. Fry the garlic for a minute and then add the tomatoes. Sprinkle some more salt and pepper to taste. Let it cook for about 5 minutes until the tomatoes release their juice. Deglaze with the white wine and let it simmer for another 5 minutes.
  • Add the fish to the pan and heat it in the sauce for a minute or 2. Add the basil.
Serve this fish with for example some orzo like I did. This goes well with the tomatoes and you have a delicious Mediterranean dish.
