Cod with carrot and pesto

Cod with carrot and pesto, healthy and “light”

Estimated reading time: 3 minutes

Because life can sometimes be complicated enough, I have an extremely simple dish here. And that it often is, simplicity, pure flavors and not too much fuss. Exactly like this one codfish with carrot and pesto. Can you live on this? Isn't this much too little? Yes: we can all live on a lot less than we consume on a daily basis. Think about what you actually put in your mouth every day. ( Cod from the oven recipe. )

Keep this up for a week and then add it together. You will be amazed at what it actually is. I once watched a program on TV that had two people switch lifestyles. The confrontation moment was when two large Plexiglas tubes were filled with what these people ate. Sometimes really shocking to see what disappeared in those tubes!

Both lifestyles were very unhealthy, one ate way too much and the other ate way too little and both really unhealthy! They both suffered from health problems such as high blood pressure, low energy levels and poor skin. How beautiful it was to see that both looked completely different after a few months! The fat one became much thinner, the skinny one became much healthier and both ate much more vegetables, fruits and balanced meals. They also felt much better, both physically and mentally. It was an amazing transformation that showed that it's never too late to change your lifestyle.

Delicious with fresh homemade pesto

Which once again indicates that we really determine how we feel about ourselves! Every pound goes through the mouth and you have a huge influence on your own health! So every now and then a light meal like this codfish with carrot and pesto will only do your body good.

Here you will find the complete recipe with all the ingredients you need. I hope you have fun preparing the dish below.

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Grate the skin of the carrots and cook in a pan with plenty of water and some salt, then drain.
  • While the carrots are cooking, we bake the cod and make the pesto. We season the cod with salt, pepper and the persillade. Fry the fish on both sides until cooked through.
  • Spoon the warm carrots onto a plate and immediately top with the pesto. Add the fish and garnish with some extra pine nuts.

    Looks delicious.
But what should be done with the persillade mix?
Thank you in advance for your answer.

    Greetings,

    Manolito
