On the weekend I have a little more time to cook and this is a nice recipe for that, it takes a little more preparation time and different cooking techniques. I myself am not a huge fish eater because I don't like bones very much, but there is not one in this Cod fillet with herb crust! baking cod fillet recipe
Buy your fish from a good fishmonger because quality is of course very important. The herb crust tastes fantastic because of all the fresh herbs it contains and goes very well with the fish. You can now also find them in the freezer section of the supermarket, this type of fish with crust. But once you've tasted the fresh version, you won't want anything else! I made this recipe from my cookbook Cooking school classic, the ginger roots are own recipe.
And this is how you make the cod fillet with herb crust:
-This recipe requires some timing so make sure everything is ready so you can work quietly.
-We start with the herb crust, finely chop the shallots, wash and dry the herbs and remove the leaves from the twigs. then finely chop all the herbs. Take a bowl and mix all the ingredients for the herb crust in it. Take a piece of baking paper and roll a plate about 4 mm thick with a rolling pin, then place it in the fridge with baking paper and all to harden, at least half an hour.
-Now make the green “sauce”, it is not a thick sauce like gravy but a lot more watery. Rinse the parsley sprigs and remove the leaves.
Boil the leaves in salted water for about 2 minutes, then drain and collect some liquid in a cup. Put the leaves in your kitchen mixer and mix with some water to a liquid mixture. Then press it through a fine sieve and set aside.
The carrots for the cod fillet with herb crust
- Then grate the carrots and halve them, boil or steam them for about 10 minutes, put them on a dish.
-For the fish, mix the sea salt with the sugar and sprinkle a thin layer in a bowl, place the cod on top and cover with the rest of the mixture. Cover the dish with cling film and put it in the fridge for 20 minutes, this is called “precooking in salt”.
-Then take them out of the fridge and rinse them with cold water and then pat them dry. Now preheat the grill in the oven, heat the olive oil in a frying pan over high heat and fry them for one minute. Then turn them over and add the butter and fry them over medium heat for 5/6 minutes while basting them with the foaming butter. Then let them rest on a grid.
-Take the herb crust from the refrigerator and cut 4 slices from it, they should be slightly larger than the cod fillet and place one slice on each piece.
-Then place the Cod fillet with herb crust in an oven dish and let them brown under the grill, taking care not to let it go too fast!
-In a skillet melt 25 grams of butter and add the ginger and sugar and the carrots and mix it well and fry them briefly.

Make sure the plates are ready and with a spoon you pour some green sauce on it, put the fish on it and serve with the ginger carrots and some briefly fried or steamed samphire, nice white wine with the Cod fillet with herb crust.

- 1 tablespoon freshly grated ginger
- 1 tablespoon White sugar
