Ingredients:

  • 4 pieces cod fillet
  • 250 gram carrots
  • 1 big leeks
  • 1 tray samphire
  • 100 ml cooking cream
  • 150 ml vegetable stock
  • butter (e.g. butter for frying)
  • 2 tl cornstarch

And this is how you make it:

  • Preheat your oven to 180 degrees.
  • Scrape the carrots and clean the leeks. Cut them both into slices.
  • Take a frying pan and put some butter in it. Fry the vegetables over a low heat and then add the stock. Season it with some freshly ground pepper. Put a lid on the frying pan and let it simmer for about 5 minutes.
  • Take a bowl and add the cooking cream, the 2 types of mustard and the parsley and 2 teaspoons of cornflour. Blend it all into a smooth sauce.
  • Take a baking dish and grease it with butter. Sprinkle some salt and pepper on the cod fillets. Remove the lid from the frying pan and add half of the sauce. Spoon the vegetables with sauce into the greased baking dish.
  • Place the fish on the vegetable mix, pour over the rest of the sauce and cover the dish with a piece of aluminum foil.
  • Place the dish in the oven for 20 minutes until the fish is cooked. You can remove the foil during the last 5 minutes.
  • Meanwhile, fry a few sprigs of samphire in a frying pan with a little oil for about 3 minutes.
  • Finally, remove the dish from the oven and serve with the samphire.

    Question, concerns cod with leeks, carrots and mustard cream sauce. Do you add the cooking cream straight away or do you let it boil down because you only write about adding the stock but not clear what to do with the mustard cream sauce?

    1. Hi Ilse, In step 4 of the recipe you make the cream sauce that you pour in step 5 and 6 and add this sauce to the oven dish. After the fish is ready, scoop it out of the oven with the vegetables and fish. I hope I helped you that way? Gr Francine
