My father used this statement regularly and this cod fillet on a bed of ratatouille certainly falls under that heading. Cod fillet is a magical delicacy, originating from the rich seas, where this iconic fish with its full, creamy texture lights up the stars of the kitchen. And this is how you make the Cod fillet on a bed of ratatouille:
-Provided: this is my version of ratatouille and not the one "exactly" as it should be.
-We'll start with all the vegetables. First, take the aubergine, cut it into small cubes and put it in a colander. Hang it above your sink and then sprinkle salt on it. By doing this, you will slightly remove the bitter taste from the eggplant and extract moisture.
-While the eggplant is draining, we also cut the bell pepper, zucchini and tomatoes into cubes. We chop the shallots and garlic, it doesn't have to be super finely chopped.
Then take a frying pan with a high rim and add a little olive oil in it. Then fry the shallot and garlic until translucent and then add all the vegetables, including the aubergine. Season with 2 tablespoons of Provencal herbs and add the tomato puree and let it stew for 20 minutes.

The cod fillet:
We're not going to do anything exciting with this. Rub both sides with the Moroccan spice mix, heat a frying pan and add some olive oil. Then fry the cod on both sides until it is nicely cooked.
