If I have to estimate it that way, I think the Aperol spritz was the most popular drink on the terraces last summer. In any case, I've seen him everywhere. And although it is a very nice summer drink, you can continue to drink it in the autumn! We make a nice autumn version with this cinnamon syrup Aperol ginger spritz. We serve it with ginger beer and homemade cinnamon syrup. To stay in the autumn atmosphere, we also use mandarin.
Cinnamon syrup Aperol ginger spritz
The classic Aperol has a somewhat bitter taste. In this version we use sweet syrup and ginger beer, so it will really have a different taste than you are used to, but certainly not worse! If you are not a fan of ginger beer, serve it with prosecco.
The syrup you make can be kept for a long time. You can simply store it in the refrigerator in your glass bottle with a screw cap on it. You can also use it with other drinks. If you want to give it some more flavor, you can also add star anise when making your syrup.

Ingredients:
- 80 ml Aperol
- 330 ml ginger ale
- 2 el cinnamon syrup
- 2 cinnamon sticks
For the syrup you will need:
- 1 tangerine - cut in the middle
- 2 cinnamon sticks
- 200 gram sugar
- 150 ml water
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- We make the syrup first. Cut the mandarin, peel and all, through the middle so that you can see all the segments. Place cut side down in a pan. Add the cinnamon sticks, sugar and water and bring to the boil. Let it simmer gently for about twenty minutes. Then strain through a fine sieve and pour into a glass bottle and allow to cool.
- Place some ice cubes in two wine glasses and pour 1 tbsp syrup, 40 ml Aperol and half the can of ginger beer into each glass.
- Add a stick of cinnamon to the glass and serve.
