Chestnut mushroom soup with Irish beef
As you have seen in recent years I am a fan of Irish beef. I hope to set foot on Irish soil sometime this year. Sometimes you have that that you go somewhere and you feel right at home. I have that in France, but strangely enough also in Ireland.

I can still remember when we were in Dublin and ended up in an Irish pub. We struck up a conversation with some Irish youngsters and spent the evening drinking with them. An Irish band in the background with the well-known sounds, people clapping, a very friendly atmosphere.

Ingredients:
- 400 gr Irish beef (steak)
- 400 gr chestnut mushrooms - cut into slices
- 250 ml beef stock
- 750 ml beef boullion
- 3 toes pressed garlic
- 250 ml Guinness beer
- 1 white onion - XNUMX onion - shredded
- 5 el flower
Herbs and spices
- 1 el Persillade (spice mix)
- fresh thyme leaves
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the steaks into cubes of about 2 by 2 centimeters. Place them in a bowl and sprinkle with a little salt and pepper. Add two tablespoons of flour and toss until the meat is coated with flour.
- Take a stockpot with it, I cooked this soup myself in a large stew pan because it has a nice thick bottom. Heat the pan and add a dash of olive oil and 50 grams of butter. Fry the steak cubes on high heat until nicely browned on all sides, then scoop out with a slotted spoon and set aside until use. They should be cooked medium.
- Add the chopped onion and mushrooms to the fat in the pan and add a tablespoon of persillade. Add the garlic and fry until the mushrooms are a nice golden brown colour. Pour in the Guinness beer and let it reduce slightly over high heat. (minute or 5)
- Add the rest of the flour to the pan and stir well. Then add the hot stock and beef stock and stir the soup. Let it simmer for about twenty minutes.
- At the end, add the diced steak and let it warm up in the soup for a while. Not too long otherwise the meat will cook too far. Spoon into the bowls and sprinkle over some thyme leaves.
