You need:

  • 500 gram chicken liver
  • 3 shallots - XNUMX onion - shredded
  • 75 gram dried cranberries
  • 150 gram mushroom mix - finely chopped
  • 2 toes Garlic - finely chopped
  • 3 twigs fresh thyme
  • salt
  • peper
  • 2 el persillade spice mix
  • 10 slices bacon
  • 180 gram butter - in cubes
  • 50 ml whiskey - Glenfiddich

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take the chicken liver, cut away the membranes and "seins" with a knife (sine: tendon, the white hard pieces in the liver). Pat the liver pieces dry with some kitchen paper.
  • Chop the shallots, finely chop the mushrooms and garlic.
  • Grab your frying pan and fry the pieces of liver for a minute or two. Sprinkle the persillade over it.
  • Place the livers in your food processor and add the cubes of butter. Spin your machine until you have a nice smooth mix. Then take a sieve and push the mix through the sieve with a spatula into a bowl.
  • In the frying pan we fry the shallot, garlic, cranberries and mushrooms for about 4 to 5 minutes and then add the Whiskey.
  • Add the contents of the frying pan to the chicken liver mix and mix well. Taste it and add additional salt and pepper if needed.
  • Line your pâté tin with cling film and place the bacon slices on top. Spoon the pate into the mold and cover. Then put in the fridge for at least 3 hours to set.
  • The pate can be kept in the fridge for a few days.
  • Delicious bites!
