After a December full of delicious bites, many wines and many dinners, the brakes have to be put on again. Now I am and remain a Burgundian and I will never quite go through life as a “fit girl”. So when it comes to meager recipes, empty plates and three leaves of lettuce, you have not come to the right place. But this Kickstart salad with cauliflower rice is certainly not a bad start. Kickstart salad with cauliflower rice
The salad can be eaten cold or lukewarm. We warm the couscous and cauliflower rice first. And the chickpeas come out hot from the airfryer. Especially for people who have trouble eating salad in the winter, this Kickstart salad with cauliflower rice is a solution.
Are you full? Do you have anything left? Then you simply take it to work in a container. Or at home if you are working from home. In any case, we are not going to starve to death here at Heerlijke Happen, but we will cut back a bit on the heavy dishes in the near future. Salad with cauliflower rice

Ingredients:
- 75 gr couscous - (uncooked)
- 300 gr cauliflower Rice
- 1 call
- 1 avocado
- 400 gr chickpeas
- 100 gr Feta
- 2 fresh mint
- 1 bag of arugula
From the pantry:
For the dressing:
- 4 el yoghurt
- 1 el honey
- 1 el vinegar
- 1 tl mustard
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cook the couscous and cauliflower rice according to the package in two different pans. Drain and add together and stir well. Season with the ras el hanout, salt and pepper.
- Bake the chickpeas in the airfryer until golden brown. I always season them with a tbsp olive oil and 1 tbsp persillade mix.
- Cut the avocado and apple into thin wedges.
- For example, in an old jam jar, add all the ingredients for the dressing and shake well.
- Take the plates and put the arugula on it first, then a scoop of the couscous-cauliflower rice and finish the plate.
- Crumble the feta over the salad and sprinkle some fresh mint leaves on top. Finally, drizzle some dressing over it.
- Delicious bites!
