We Dutch still eat far too few vegetables and legumes. If you take a critical look at the amount of vegetables you eat per day, do you arrive at 250 grams? That is the recommended amount. The name of the kidney bean is derived from the shape of the bean itself. It looks a bit like a kidney. They are also known as kidney beans. It is most often used in a chili con or sin carne. Ingredients:
- 200 gram kidney beans
- 200 gram chickpeas
- 10 pickles - finely chopped
- 1 shallot - XNUMX onion - shredded
- ½ can of roasted peppers - finely chopped
- 15 black olives - finely chopped
- 3 fresh parsley sprigs - chopped
- 1 can of corn - leaked
For the vinaigrette:
- 4 el olive oil
- 3 el Red wine vinegar
- salt
- peper
- ½ tl chili powder

And this is how you make it:
- Take a measuring cup and add all the ingredients for the vinaigrette in it. Beat vigorously, I often use an empty jar with a lid so that you can shake really hard just before use and then pour the vinaigrette on the salad.
- Chop / cut all vegetables from the list above fine / into cubes.
- Remove the kidney beans and chickpeas from the bag or can and rinse briefly under the tap in a colander. Drain and then put in a bowl.
- Add the rest of the ingredients and toss well together. Drizzle over the vinaigrette and refrigerate briefly before serving.
