Not everyone likes processing fruit in savory dishes. But it is very tasty in this recipe! At the moment there are plenty of kakis for sale in the supermarket. And after some snooping around on the web, I discovered that not very many recipes are made with it. Is it such an unknown fruit? Perhaps not so popular here in Europe? It is the national fruit of Japan and one of the oldest cultivated plants. It has been cultivated for over 2000 years. But a little closer it is also grown in the Sharon in Israel, namely the Sharon fruit. You have to eat it really ripe because the fruit contains a lot of tannin. That gives a slightly bitter sour taste. To find more fame and recipes online, I made this chicken en papillotte with kaki fruit.

And this is how you make it:

-Preheat your oven to 180 degrees. We bake the chicken in an open “en papillotte” package. This is a package that you normally fold so that what's in it steams. Keeping the package half open will make the top a little crispy.

-Take a sheet of baking paper and place the slices of Parma ham on it. Place a handful of spinach leaves on top.

-Clean the chicken breast and then rub it with the Ras-el-Hanout herbs. This really gives a wonderful flavor to the chicken. Place the fillets on top of the spinach.

- Cut the persimmon into pieces, the garlic and the mozzarella into slices. Place this back on the chicken and then fold the edges of the ham around it as you can see in the photo here.

-Fold the package into a kind of open toffee package and finally drop some olive oil into the package.

-Place the parcels in the oven for 25 to 30 minutes until the meat is nicely cooked.

I served the chicken with a delicious couscous, but you could also serve it with rice or pasta. Remove the chicken from the package and serve it on a plate.
