We are quite lazy in the Netherlands when it comes to food. The supermarkets are always full, you can easily get something to eat in the catering industry, and we all throw a lot of food in the bin every year. I am sometimes guilty of that myself, but I try to avoid it. In this case, both the burrata and the chicken roulade were a day out of date. Well, in the Netherlands you can still eat the item with peace of mind. The best before date is a good guideline, but also just use your nose and tongue to taste. I wouldn't use meat that smells sour again, but this roulade could still be baked very well. With some other ingredients I had in stock I made this fantastic Chicken Roulade Burrata Bagel.

I can only say that this is another great recipe. You actually don't need that much, and the flavors pop. Especially the stewed onions, they also absorb the juices from the meat in the pan and you can taste that in your sandwich. Also the bagel seasoning mix is a winner. Poppy seeds, sesame seeds, garlic, salt, pepper, a perfect mix to finish your sandwich!

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Sear the roulade in some shortening in the stew pan. Make sure you keep turning so that all sides are golden brown. Deglaze with 150 ml of water and add the half onion rings. Put the lid on the pan and let the roulade stew for 40 minutes, keep turning every now and then and add some water if it becomes too dry. The onion rings continue to stew and become wonderfully soft!
  • Cut the tomatoes through the middle and place in a bowl, sprinkle the balsamic vinegar over them and sprinkle with some salt and pepper. Cut the basil leaves into strips and mix them in as well.
  • Bake the bagels according to the packaging.
  • When the roulade is ready, let it cool briefly and then cut off a few slices and place them on the bottom of the bagel, add a layer of stewed onions, then spoon the tomatoes and half of the burrata on top. Top with the bagel seasoning mix and the top of the bagel and serve immediately, delicious bites!
