You just have to give the chicken some time to marinate! I use chicken thigh to make this chicken satay with yogurt mint sauce. Just that little edge of fat here and there that melts during grilling. Gives the whole thing a lot of flavour. The spice mix is of course also very important. My regular supplier Van Beekum spices has the perfect mix for this. (By the way, this is salt-free, so if you want salt you will have to add it). I cut the chicken into cubes, sprinkle the spice mix over it together with the juice of a lime and some wok oil. This oil also has a nice spicy taste. Then mix well and let it sit in the refrigerator overnight. The next day on the hot grill and then enjoy.

Although satay sauce is of course super tasty, I thought I would take a different approach this time. We make a delicious yoghurt sauce, wonderfully fresh with mint and some lime juice. Serve the chicken satay with some cassava chips, rice and some sweet and sour vegetables and you have a perfect meal. Grilling takes less than 15 minutes, so apart from marinating, this is also a meal that is on the table very quickly.

Ingredients:
- 500 gram chicken thigh - cut into pieces
- 2 limes
- 1'' el chicken satay spice mix (without salt)
- 150 ml Greek yoghurt
- 3 twigs fresh mint - the leaves finely chopped
- peper
- 4 el wok oil

And this is how you make it:
- Cut the chicken thigh into cubes and place in a bowl. Add the spice mix, the wok oil and the juice of 1 lime. Mix well and then let it marinate overnight in the refrigerator.
- In a bowl, mix finely chopped mint leaves, Greek yogurt, juice of 1 lime and some pepper into a nice sauce.
- Thread the chicken thigh cubes onto satay skewers and then fry them on a preheated grill / grill pan.
- Serve with the sauce and possibly some cassava chips.
