You just have to give the chicken some time to marinate! I use chicken thigh to make this chicken satay with yogurt mint sauce. Just that little edge of fat here and there that melts during grilling. Gives the whole thing a lot of flavour. The spice mix is of course also very important. My regular supplier From Beekum spices has the perfect mix for this. (This one is salt-free, so if you want salt you will have to add it). I cut the chicken into cubes, sprinkle the spice mix over it together with the juice of a lime and some wok oil. Although satay sauce is of course super tasty, I thought I would try something different this time. We are making a nice yoghurt sauce, wonderfully fresh with mint and some lime juice, which goes perfectly with the chicken. The creaminess of the yoghurt balances nicely with the fresh flavours of the mint and the sourness of the lime juice, which gives a surprising twist to the dish. Serve the chicken satay with some cassava chips, which add a crunchy texture, rice that absorbs the flavours nicely, and some sweet and sour vegetables for an extra flavour dimension, and you have a perfect meal.

The combination of these ingredients creates an explosion of flavors. Grilling takes less than 15 minutes, so apart from the marinating, this is also a meal that is on the table super fast. Ideal for busy weeknights or when you have guests and want to impress!

- 500 gram chicken thigh - cut into pieces
- 2 limes
- 1'' el chicken satay spice mix (without salt)
- 150 ml Greek yoghurt
- 3 twigs fresh mint - the leaves finely chopped

- 4 el wok oil

And this is how you make it:
- Cut the chicken thigh into cubes and place in a bowl. Add the spice mix, the wok oil and the juice of 1 lime. Mix well and then let it marinate overnight in the refrigerator.
- In a bowl, mix finely chopped mint leaves, Greek yogurt, juice of 1 lime and some pepper into a nice sauce.
- Thread the chicken thigh cubes onto satay skewers and then fry them on a preheated grill / grill pan.
- Serve with the sauce and possibly some cassava chips.
