'2021 will be my year'. A statement that was thrown into the air by just about everyone instead of fireworks around the turn of the year. How about your year? We are in the middle of a lockdown and we still have to do it together. It seems as if everyone has the feeling that they have given up a year of their life and are now going for it. Can't you make every year a good year? In any case, I intend to make it a good year. Not that 2020 was that bad: I made my very first cookbook, expanded my photo skills and developed a business plan. And to start the year off right, I'm sharing with you a chicken burger recipe for a chicken burger with portobello bun. Chicken burgers
A little end-of-the-year dip…
Although I did have a dip in the last weeks of the year. I lost my fitness mojo for a while. The weekly menus no longer rolled out of my keyboard. Walks no longer leave my legs and creativity no longer leaves my brain. Quite frustrating I must say. What had my body indicated very well? Fancy good food, fun and Christmas movies! So I just enjoyed it…. Recognizable? This dip or this break is not bad at all. You will have to deal with it at several times in your life.
The trick is to pick up the thread again. I allowed my break the first weekend of January. It was even festively closed with burgers from the great Yellow M. The weekly menus for the coming weeks are now ready again. Have the plans been made again and has it already been more than 5 hours of walking. Every beginning is one! We have installed a nice app with the family and we are making it a challenge who can get 25 hours of walks first! That gives even more motivation. Chicken burgers
New plans for 2021
What plans have I made for next year? One of the first is that my website The Kicktstart Kitchen will go live this month. And as a gift everyone gets a free healthy e-book. That means work to be done for me. Take lots of photos and write texts. But above all a lot of healthy food, exercise in the open air, sleep well and also relax. Are you in? Chicken burger with portobello bun

Ingredients:
- 300 gram minced chicken
- 300 gram sweet potato fries - from the freezer
- 4 portobello mushrooms
- 1 ei
- 1 large beef tomatoes
- 1 clove of garlic
- ½ Red onion
- 50 gram cheddar cheese
- 2 el red onion compote - (otherwise red onion rings)
From the pantry:
- 2 el oatmeal
- 1 el soy sauce
- 1 tl mustard
- ½ tl smoked paprika powder
- pepper and salt
- olive oil for frying
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Finely chop the red onion and garlic. Add this in a bowl along with the minced chicken.
- Add the egg, soy sauce, oatmeal, mustard, paprika and salt and pepper. Knead it well with your hands. If it stays very wet, add another scoop of oatmeal.
- Shape into two nice round burgers and place them on the kitchen paper. This will allow some moisture to be extracted.
- Heat some oil in a pan and add the sweet potato fries. Bake it for about 10-12 minutes. (this can also be done in an aifryer).
- Heat some more oil in another frying pan and turn the heat down a bit. Place the burgers in the pan and let them cook for a few minutes on both sides.
- Meanwhile, cut the beef tomato into thick slices and slice the cheese. * see notes.
- Place the portobello mushrooms in the pan with the burgers and fry them on both sides for a few minutes.
- Now place a portobello with the convex side down. Place a slice of beef tomato on top. Then put the burger on top. Now drape the cheese over the burger and top with a tablespoon of red onion compote. Finally you end up with a portobello with the round side up. Serve with sweet potato fries and ketchup if desired. If the burger threatens to fall over, insert a knife or skewer.
